I Didn't Even Have To Use My AK

Oh, what a good food day.

Breakfast - pancakes with sliced apples and syrup.

Lunch - veggie sausage quesadilla (which got rudely interrupted by a phone call - but at least it was to confirm that I'm going apple picking next weekend!)

Dinner - oven baked breast of tofu (yes, it was successful!) and an obscene amount of mashed potatoes

And for dessert.... Pumpkin Chocolate Brownies

Oh, and they were good. They are good, as I'll be munching on these for a few days. These are a really moist, light brownie and the smell is just amazing. I've been craving everything pumpkin lately, and by adding chocolate to it, well, I'm satisfied.

Pumpkin Chocolate Brownies

2/3 cup packed brown sugar
1/2 cup canned pumpkin
1 egg
2 egg whites
2 Tbsp. vegetable oil
1 cup all purpose flour
1 tsp. baking powder
1 tsp. baking cocoa
1/2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. salt
1/4 tsp. nutmeg
1/3 cup semi-sweet mini chocolate chips

Preheat oven to 350° F. Coat 8-inch-square baking pan with nonstick cooking spray.

Combine sugar, pumpkin, egg, egg whites and oil in large mixer bowl. Beat with an electric mixer on medium speed until blended. Add flour, baking powder, cocoa, cinnamon, allspice, salt and nutmeg. Beat on low speed until batter is smooth. Stir in morsels. Spread evenly into prepared pan.

Bake for 15 to 20 minutes or until wooden pick inserted near center comes out clean. Cool in pan on wire rack. Cut into 2-inch squares.
